The 3 year old bee pollen is likely oxidizing slowly, and that is why its turned brown. Look for signs of spoilage - mold/mildew.

As for the new Spanish pollen, an odd smell is quite common and reflects the unique source of the pollen typically, although spoilage can be a concern as well.

Brown Bee Pollen

Hello! I'd had some bee pollen for 3 years. It smells good but has turned brown... I tasted a couple granules and think it's good. since I wasn't sure, I bought another lb. of some Spanish bee pollen granules, they are beautiful yellow but smell like dog and even taste the same. The old stuff tastes and smells better. Opinion?
